The great almondshake recipe

People ask about it now and again when I mention I have it for breakfast. Here’s the secret.

  • 1/2 cup raw almonds, blanched and peeled
  • 2 cups water
  • maple syrup (optional)
  • Approximately 2 frozen bananas (cut into small chunks before freezing), the riper the sweeter they are, and better
  • half a papaya (or other fruit like apricot or dates)

Add one cup of water and almonds, blend at high speed for 2 minutes. Add another cup of water and blend for 2 more minutes. Strain almond mixture. Makes approximately 2 cups almond milk.

Place 2 c. almond milk in blender and add a few frozen bananas at a time while blending at high speed. Add papaya or other fruit until thick consistency. Strawberries are also a good option.

With just bananas (and no other fruit), and adding 1/4 grated nutmeg and 1/2 teaspoon vanilla extract, you have a great substitute for egg nog.
